Tom Yum Bangus (Thai-inspired Hot and Sour Soup)

Ingredients

  • 1 whole bangus (cleaned and sliced) or bangus belly

  • 4 cups water

  • 1 thumb-sized ginger, sliced

  • 2 stalks lemongrass, pounded

  • 3 cloves garlic, minced

  • 1 small onion, sliced

  • 2 tomatoes, quartered

  • 3-5 pcs chili (adjust to spice preference)

  • 200g mushrooms

  • 2 tbsp fish sauce

  • 2 tbsp Tom Yum paste

  • 1 tbsp calamansi or lime juice

  • 1 tsp sugar (optional)

  • Fresh cilantro or spring onions for garnish


Cooking Instructions

  1. In a pot, sauté garlic, onion and ginger until fragrant

  2. Add water, lemongrass, tomatoes, and mushrooms. Let it simmer for 8-10 minutes.

  3. Stir in the Tom Yum paste and fish sauce

  4. Add the bangus slices and cook for about 8-10 minutes or until fully cooked.

  5. Add chili and sugar if desired.

  6. Turn off the heat, then add calamansi or lime juice

  7. Garnish with cilantro or spring onions before serving.


Serving Suggestion

Serve hot with steamed rice for a comforting and flavorful meal.
